    In our catering kitchen, the best breakfast is always the one the crew makes before the first event of the day: a hot pan, a couple of eggs, warm tortillas, and a good squeeze of salsa. It takes five minutes, and it's the reason we keep a bottle of El Guero 2 next to the stove at all times.

    These salsa eggs are that breakfast. The eggs get crispy, lacy edges, and then the salsa goes right into the hot pan for a few seconds.     Ingredients

    • 2 large eggs
    • 1 tablespoon oil or butter (or a spoonful of rendered chorizo fat if you have it)

    • Pinch of salt
    • 2–3 corn tortillas

    Instructions

    1. Heat the pan. Set a nonstick or cast-iron skillet over medium-high heat and add the oil. Wait until it shimmers, about 1 minute. Hot oil is what gives you crispy edges.
    2. Warm the tortillas. While the pan heats, warm the tortillas directly over a gas flame for 10–15 seconds per side, or in a dry second pan. Wrap them in a towel to keep them soft.
    3. Fry the eggs. Crack the eggs into the pan and season with a pinch of salt. Let them cook without moving them for 2 minutes, until the whites are set and the edges are golden and crispy.
    4. Add the salsa. Squeeze 1–2 teaspoons of El Guero 2 salsa into the oil around the eggs, not on the yolks. It will sizzle right away. Tilt the pan and spoon the hot salsa-oil over the whites for 20–30 seconds. The garlic and chile de árbol will bloom and smell toasty.
    5. Finish. For runny yolks, take the pan off the heat now. For jammy yolks, cover the pan for 30–60 seconds.
    6. Serve. Slide the eggs onto the warm tortillas, spoon the salsa-oil from the pan over the top, and add your toppings. Finish with one more stripe of salsa if you like it hot.

    • Control the heat: Chile de árbol is a spicy chile. Start with 1 teaspoon in the pan. You can always add more at the table.
    • Don't burn it: The salsa only needs 20–30 seconds in the hot oil. Longer than that and the garlic can turn bitter.
    • Make it a meal: Serve it over refried beans with a side of rice, or tuck everything into a flour tortilla for a quick breakfast burrito.
    • Feeding a crowd? Use a large skillet or a griddle, fry the eggs in batches, and keep a squeeze bottle at the table so everyone can set their own heat level.
